Kattem 1000 years (1023 - 2023)

In 2023 it will be 1000 years ago that Kattem was first mentioned on an official document of the priory of Haspres near Cambrai. With this document Kattem was transferred to the Sint-Vaast abbey in Arras. To celebrate this millennium, we come up with something very special: our Kattem gueuze El Ambiguo.


Gueuze El Ambiguo

Team Kattoem is very proud to be able to offer you a sublime gueuze with the roaring name "El Ambiguo". This fantastic gueuze was brewed by Koen Christiaens, born and raised in Kattem under the watchful eye of Willem Van Herreweghen – brewmaster, researcher in a hop project at Ghent University, guest lecturer at the University of Jinan (China) in 2014 and known in the beer world as the uncrowned gueuze pope – more info on this website. Our gueuze was made with lambic that could mature quietly in American bourbon barrels. The result is simply stunning and unique. The wheat in this brew was grown and supplied by Pieter Van Wilderode of the “Hof te Kattem”. The bottle is olive brown and contributes to a perfect fermentation in the bottle, the gueuze has a beautiful amber color.

Geuze: a delicious drink, with a brewing method straight from the Middle Ages! It is the only beer in the world that extracts its yeasts from the ambient air, and therefore: "Beer of spontaneous fermentation". And the Pajottenland | Zennestreek is the only region in the world where this is possible. It is also a real seasonal beer, brewed in the cold months, and certainly the beer that ferments and matures the longest in wooden barrels.


This Kattem gueuze El Ambiguo is a "Bourbon gueuze" that has been aged for 2 years in Bourbon barrels, hence the beautiful intense color and the special wood touch. It is a very soft gueuze, refreshing yet tender, complex yet thirst-quenching. Only water, homegrown hops, barley malt and wheat from the Pajottenland are the raw materials. Unfiltered and 6 months re-fermented and matured in the bottle, this Bourbongeuze is perfectly drunk from August 2023. Taste this divine drink, this is a wonderful gift from Pajotse nature!
